The old Esrum Monastery, which now is a cultural exposition center in the north of Denmark, asked us for a proposal to transform their basement into a useful café and restaurant. The monastery, which dates from the 12th century, is completely protected and therefore we had to design freestanding elements for the walls and floors. We wanted to play with the existing patterns on the floors and thereby give a reference to the past in the modern elements being introduced.
